Too often, decaf is an afterthought in the coffee industry, made using older, past-crop beans.
We take a different approach, sourcing fresh, current-crop speciality beans that meet the same uncompromising standards as the rest of our menu.
The sugarcane process
To preserve the coffee’s natural flavours, our beans are decaffeinated at origin using the sugarcane ethyl acetate method.
This process uses a naturally occurring compound derived from sugarcane to gently dissolve the caffeine while leaving the bean's complex oils and aromatic profile intact.
The result is a coffee that is 99.9% caffeine-free, but completely representative of its origin and the skill of the grower.
